Semi-cooked cheese obtained from whole sheep’s milk with negligible bacterial content. Produced by an italian dairy farm.
The interior is compact, fine-grained, and can be broken off in flakes. It tends to ‘dissolve’ on the tongue, and has the typical strong flavour of mature "pecorino" cheese.
Excellent as a table cheese, whether during or at the end of meals, and for grating. The interior is white, tending to straw yellow
Diameter: 36 cm;
Weight per wheel: 15 - 18 Kg approx.;
Packaging: cardboard; each cardboard contains one wheel, either whole or cutted in portions.
Ingredients: Heat-treated sheep’s milk, calf rennet, salt, milk ferments.
Maturing: 9 months minimum
Shelf life: 24 months
Storage temperature: 8/10 °C
